1/4tspcayenne pepper
1tbspapple cider vinegar
Instructions
Heat a pan over medium heat and add diced bacon. Cook until the bacon renders its fat.
Add diced onion and sauté with the bacon until softened. Season with salt.
Add diced tomatoes, sugar, vinegar, and cayenne pepper. Reduce heat to low and simmer until the mixture thickens to your desired consistency. This will take about 20 minutes for a spreadable jam consistency. Keep heat on low to caramelize but not burn the mixture.
Let the jam cool to room temperature.
If you are happy with the consistency, store in an air tight container. If you would like a smoother consistency, run the mixture through a food processor to your taste. Then store.
