Ingredients
2lbsweet potatoes
2tbspall-purpose flour(inside) + 1/4 cup for coating
1/2tspcinnamon
1/4tspcumin
1/4tspginger
1/2tspsalt
1smallegg
1/2cuppanko
2tbspolive oil
Instructions
Preheat the oven to 400F. Then, wrap each sweet potato with foil paper and arrange them in a baking tray.
Bake sweet potatoes for 25 minutes or until fork tender. Let them cool down, and then scoop sweet potato flesh. Discard the peel.
Add baked sweet potato, 2 tbsp of all-purpose flour, cinnamon, ginger, salt, and the egg to a mixing bowl. Stir well to combine.
Make 2 inch tater tots using your hands. Having a glass of water in case the mixture is too sticky can be helpful. Then, roll each tater tot in a mixture of ½ panko and ¼ cup of all-purpose flour.
Brush a baking tray with olive oil and then arrange tater tots in a single layer, keeping a small distance between them for an evenly baking.
Bake tater tots at 400F for 20 mins, flip them over, and bake for another 15 minutes. Remove them from the oven when nicely golden and crispy on top.
Serve warm with your favorite dipping sauce.
