Healthy Potato Chowder with Mushrooms

Ingredients

onion
chopped

butter

water

mushrooms
cleaned and sliced

potatoes
peeled and chopped in 1 - 2 inch cubes

cup
celetry
chopped
1
cup
carrots
sliced
2
cups
milk
I use whole milk
1/2
cup
Parmesan cheese
grated
Instructions
In a medium sized skillet, melt butter then sauté the onion and celery until tender.
Remove from heat and add the flour, salt and pepper. Stir well and then place in a slow cooker.
Add the water, potatoes, mushrooms and carrots to the slow cooker. Stir well.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. When the potatoes are tender add the milk and parmesan cheese.
Cook on high for another 30 minutes
