Ingredients
Kale Salad
3cupsbaby kale
1/2cupStrawberriessliced
1/2cupwalnut halves
1/3cupfeta cheesecrumbled
1TBLchia seeds
1TBLpumpkin seeds
Apple Vinaigrette
1/3cupapple cider vinegar
1tspdijon mustard
1TBLhoney
1tsplemon juice
1/4cupapple juice
Instructions
Kale Salad
Combine all ingredients except for dressing in a large bowl, toss lightly together.
Drizzle with dressing, and toss again.
Serve
Apple Vinaigrette
⅓ cup apple cider vinegar
1 tsp dijon mustard
1 tbs honey
1 tsp lemon juice
¼ cup apple juice
Whisk all ingredients together until blended. Refrigerate for 3-5 days
