Ingredients
Cheesecake Filling
8ozCream Cheesesoftened to room temperature
3tbspGranulated Sugar
2tspVanilla Extract
Cookie Dough
¾cupUnsalted Buttersoftened to room temperature
⅔cupGranulated Sugar
½cupBrown Sugarpacked
1largeEgg
1½tspVanilla Extract
2¼cupsAll-Purpose Flour
1tspBaking Soda
½tspSalt
1½cupsSemisweet Chocolate Chips
Instructions
In a small bowl, mix the cheesecake filling ingredients until smooth, then set aside.
In a large bowl, beat the softened butter with both sugars using an electric mixer until the mixture is light and fluffy.
Add the egg and mix until combined, then stir in the vanilla.
Gradually add the flour, baking soda, and salt, folding them in with a spatula until a thick dough forms. Stir in the chocolate chips.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Scoop a tablespoon of cookie dough and press a small indentation in the center using the back of a spoon. Add about a teaspoon of cheesecake filling.
Flatten another tablespoon of dough and place it over the filling. Gently press the edges to seal.
Bake for 12-14 minutes, until the edges turn golden brown. The tops will still be soft but will firm up as they cool.
Notes
Refrigerate the cookies for one hour before baking them for best results.
