Healthy Vegetable Fried Rice is great as a meal or a side, flexible, delicious… and well, not fried. This fried rice makes easy substitutions to keep your favorite Asian inspired dish on the menu.
Rice | Chicken Stock Soy Sauce | Onion | Garlic Olive Oil | Carrot Frozen Peas | Eggs
Rinse the rice and let sit in lukewarm water for 30 minutes. Drain, then heat oil in a sauce pan and sauté the onions until soft. Add the rice and stir for a minute.
Add the garlic, then carrots, and pour in the stock and soy sauce. Cover and allow to cook on low for 10 minutes.
Once the rice is cooked, turn heat off and mix in the frozen vegetables. At this point, you may add scrambled eggs, and any other protein you wish.
