Add sesame oil, the white part of the green onion, garlic, and shredded ginger to a pan. Stir while cooking for one to two minutes until fragrant. Then, add chicken broth and soy sauce and bring it to a boil.
Slice mushrooms and bok choy to your preferred size and then add them into the pan.
Simmer for 5-6 minutes or until bok choy is tender. Taste saltiness and adjust to taste by adding more soy sauce or sea salt.
Garnish with sliced green onions, sesame seeds, and an egg on top. Enjoy!
