First, beat the eggs, then add sweet potato puree, vanilla, milk, apple cider vinegar, and melted butter and whisk to combine. Fold in sugar, gluten-free flour, cinnamon, baking powder, and salt.
Let the batter sit for 30 minutes. While waiting, prepare the streusel by mixing butter, sugar, flour and cinnamon until a grainy consistency.
Pour batter into a muffin pan lined with muffin liners and spread 1 tsp of streusel on top of each muffin. Bake for about 40 minutes. Then allow to cool before storing them in a sealed bag.
