This pumpkin pancake recipe is the way we ring in Fall. Before we even put our pumpkin on the front porch, we make pumpkin pancakes. These are tender, delicious, and topped with sweet cinnamon butter.
Flour | Baking Powder Baking Soda | Salt | Pumpkin Sugar | Brown Sugar | Eggs Vanilla Extract | Buttermilk
In a large bowl, mix flour, baking powder, baking soda, and salt. Set aside.
Mix pumpkin, sugars, eggs, vanilla and buttermilk, then whisk into the dry ingredients. Add remaining buttermilk in small amounts until you reach the consistency you like.
Preheat a griddle and coat with butter. Spoon batter on and cook until you see bubbles, then flip and cook for 1-2 minutes.
Serve with cinnamon butter and syrup! Yummm!!
