This Mexican casserole with ground beef is one of those dinners that came about while searching my pantry and refrigerator for something to feed my family. Â We all love Mexican food, so I knew this would be a hit.
MEXICAN CASSEROLE WITH GROUND BEEF
Casseroles are easy to make and are the best comfort food out there.  I mean, who doesn’t love dumping a bunch of ingredients in one dish and walking away from it?  Assembly time on this easy mexican casserole with ground beef is minimal.  Your family will think you spent hours in the kitchen.
As I said earlier, I used what I had in the pantry and refrigerator to make this dish. Â There are many other ways you can switch this recipe up to fit your families tastes.
Mexican casserole with ground beef additions/substitutions:
- Corn
- Black Beans (pinto would work also)
- Ground turkey instead of beef
- Sour cream as a topping
- Sliced Jalapeños as a topping (my husband’s favorite)
- Chopped green onions
CHEESY MEXICAN CASSEROLE
My little ones enjoy this dish as much as the rest of my family.  Since you use taco seasonings, there is not a lot of heat to it.  Of course, if you enjoy heat, you can add some jalapeños to the recipe.
If you are crunched for time, as I usually am, you can prepare this cheesy Mexican casserole the night before or in the morning before you run out of the house.

Slow Cooker Black Bean Enchiladas
Mexican Casserole with Ground beef
Ingredients
- 2 cups ground beef browned
- 1/2 green bell pepper diced
- 1/2 red bell pepper diced
- 1/2 red onion diced
- 1/2 packet taco seasoning
- 1/2 can tomato sauce
- 1/2 cup shredded cheddar cheese
- 1/2 cup tortilla chips crushed
- 1 avocado diced
- 1/2 cup sliced black olives
Instructions
- In a large bowl, combine browned ground beef, tomato sauce, and taco seasoning.
- Spray the bottom of a casserole dish with nonstick cooking spray.
- Pour half of your casserole mix into the dish, smooth down, and sprinkle with half of your cheese. Cover with the rest of your meat mixture, and then top with another layer of cheese.
- Bake at 350° degrees for 20 minutes.
- Serve with crushed tortilla chips, avocado, black olives, and any other toppings of your choice.
