Italian Biscotti is such a special treat. Crisp, sweet and perfect with a cup of coffee, this traditional biscotti recipe is much easier to make than you think!
Biscotti is one of those recipes people assume is more complicated than it really is… Biscotti is baked twice but don’t let that worry you. It is totally worth it! The trick is to make sure the biscotti cookie “log” cools completely between cutting into cookies and baking the second time.
How to Make Italian Biscotti
Preheat your oven to 350 degrees. Line or grease a cookie sheet. I really like using parchment or a silicone baking mat.
Beat sugar, salt, and butter until smooth. Next, add both eggs and the vanilla, beat again for a minute until dough is smooth.
Whisk the baking powder and flour together, then add it to the mix until dough is well combined. Fold in the chocolate chips. I usually just use my hand to make sure chocolate chips were evenly spread.
Shape dough into a log, bake for about 25 minutes. Be careful not to brown the top.
Remove the biscotti from the oven and allow it too cool completely. Mine took about 45 minutes.
Make 1/2 inch slices on the log, and place cookies back on the baking sheet. Bake for an additional 12 minutes on each side.
Once the cookies cool again, you will have a wonderful, crisp fresh biscotti cookie! Perfect with your coffee or hot chocolate!
The Best Chocolate Chip Biscotti and Tips for making simple recipe changes
This chocolate chip biscotti is AWESOME! And totally our favorite biscotti recipe. But, we also change it up pretty often. Chocolate chips can be replaced with dried fruits or nuts (like sliced almonds or pistachios!)
Biscotti might be crisp, but you don’t want them to be stale! Make sure to store your biscotti cookies in a zip top bag or an airtight container.
