We are definitely big burger lovers in my house! They’re so easy to make, and there are so many different variations to try. I sometimes serve burgers weekly, especially when I have a lot going on — they’re the ultimate no-fuss recipe. My kids love these Chili Cheese fries too, so the combo of burger fries is an immediate hit!

Today, I want to share all of the details about my chicken burger recipe! They’re lighter than ground beef or ground turkey burgers without giving up any flavor. How to make the perfect Ground Chicken Burger
Combine the burger ingredients. Add the ground chicken, onion, garlic, breadcrumbs, egg, salt, black pepper, parsley, thyme, and paprika to a bowl and mix to combine. Cover with plastic wrap and allow it to sit at room temperature for 10 minutes.
Shape the burger patties. Divide the ground chicken mixture into 4 equal portions and shape them into firm patties. You can also opt to make 6 medium-sized patties instead.
Cook. Place an iron-cast skillet over medium heat and add a tablespoon of oil (you can aslo cook your ground chicken burger on the grill). Place the chicken patties in the skillet and cook on both sides until fully cooked. Cooking time will vary depending on the thickness of your burger, but it should take around 8-10 minutes in total. Use a meat thermometer to check that the internal temperature is at least 170 degrees F.

- Use your hands to combine the ground chicken mixture and make sure to press down as you mix. This helps all of the flavors get into the ground chicken. Don’t overmix!
- Sautée the onions before adding them to your burger. Caramelized onions pair wonderfully with ground chicken.
- Get creative with your toppings! I suggest using lettuce, tomato, onion, and mayonnaise. You could also add cheddar cheese, avocado, sautéed peppers, mushrooms, ketchup, mustard, or barbecue sauce!
- Add more spices and seasonings to the ground chicken. I keep things relatively simple and use salt, pepper, thyme, parsley, and paprika. If you like spicy foods, consider adding some cayenne or chopped jalapeños!

I suggest placing the formed burger patties on a piece of parchment paper as you make them. This will make it even easier to use a spatula to place them on the cast iron skillet or grill. You should also always cook them in a bit of oil — it helps them keep their shape!
Does ground chicken need a binder?
Yep! Ground chicken is low in fat, so it will fall apart if you don’t use a binder. That’s why I add 1 egg as well as breadcrumbs to the patty mixture.
How do you keep ground chicken moist?
Because ground chicken is low in fat, it dries out easily when cooked. I find that doesn’t happen in my recipe, but if you want to be safe, all you need to do is add a little moisture to the mix. Try Greek yogurt or a bit of mayonnaise!

Ingredients
- 4 medium burger rolls
- 1 small batavia Boston Lettuce
- 1 large tomato sliced
- 1/3 cup mayonnaise
- 1 medium red onion
Chicken Patties
- 19.2 oz ground chicken
- 1/2 medium yellow onion thinly diced
- 1 clove garlic clove minced
- 4 tbsp breadcrumbs
- 1 small egg
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp dry parsley
- 1/2 tsp dry thyme
- 1/2 tsp paprika
- 1 tbsp oil for cooking
Instructions
- Mix all the ingredients for the chicken patties, except oil, in a large bowl. Let it sit over the counter for 10 minutes.
- Divide the burger mixture into four equal portions, then shape them into patties, pressing the mixture well. You could also make six patties with this amount. They’ll be medium-sized.
- Heat an iron-cast skillet or grill over medium heat and add a tbsp of oil. Then, place chicken patties and cook from both sides until patties are cooked through. Cooking time will vary depending on the thickness of your burger, but it’ll be around 8-10 minutes in total. If you’re using a meat thermometer, the internal temperature should reach 170F.

- Chop onion into thick slices and cook it in the skillet. The result will be a soft and brownish onion to add to your burger.
