Mediterranean Grilled Chicken Skewers are such a delicious, fun family dinner that goes together in just minutes before tossing them on the grill.
This chicken skewer recipe uses a simple marinade to infuse big Greek flavors including herbs and lemon. You can marinate the chicken for as little as 30 minutes – or you can make the skewers ahead and leave them in the marinade overnight if you’re planning an event and need to work ahead.
Both are super tasty and perfect with homemade tzatziki sauce!
How to Make Grilled Chicken Skewers
In a small bowl, mix together your olive oil, lemon juice, oregano, parsley, cayenne pepper, and salt until everything is emulsified. Add the chicken, making sure each piece is covered. Cover and refrigerate for at least 30 minutes or overnight.
Prepare the grill for medium direct heat. (We also have a smoker and often use it instead because we love the smoky flavor!) If you don’t have a charcoal or gas grill, you can cook this recipe in a grill pan and it works just fine.
Thread the bite-sized chicken pieces onto your skewers. Grill chicken skewers for about 12 minutes, flipping once halfway through cooking or until the chicken reaches an internal temperature reaches 165 degrees.
Chicken Skewer Recipe Tips
If you’re using bamboo or wooden skewers, make sure to soak them in water for at least 20 minutes before threading chicken. This will prevent them from charring. (Wood skewers + hot grill = burning wood)
Also when you are threading the chicken onto the skewers, don’t overcrowd the chicken. The chicken can touch, but don’t press the pieces together to get that last piece of chicken on… it makes it harder for the chicken to cook evenly. Just use an extra skewer.
Feel free to add veggies like bell peppers to your grilled chicken skewers! They are so good! And adjust the spice level by increasing or decreasing the amount of cayenne. We have to be a little careful because we have young kids in the house. But my husband and I love spicy so we often turn it up a notch when it is just us!
