This Bacon Cheeseburger Casserole is one of my family’s all-time favorite recipes. It is a bit like uber casual quiche, minus the crust and the carbs.
I have seen versions of this cheeseburger casserole with added tater tots or hashbrowns. I love it that way too but my husband feels best when he skips some of the carbs. So I make it Keto friendly and serve our tater tots or hashbrowns on the side.
Bacon Cheeseburger Casserole
Eggs are such a flexible ingredient. We love egg casseroles like this one because they are so simple to make and really seem to make everyone happy. A long time ago, I mastered using a basic quiche recipe and egg muffins to not only clear out my fridge of remnants — but also make things my kids really loved to eat.
The minute I mentioned I could turn a basic egg casserole into bacon cheeseburger casserole, my sometimes picky kids were all in.

Bacon Cheeseburger Casserole

Ingredients
- 1 lb ground beef
- 1/2 onion
- 1 clove garlic
- 4 strips cooked bacon cut into bite size pieces
- 6 eggs
- 1/4 cup heavy whipping cream
- 1 1/2 cup sharp cheddar cheese
- salt and pepper to taste
Instructions
- Grease a 9 inch pie plate and preheat oven to 350.
- Cook ground beef with onion and garlic. Drain fat and season with salt and pepper. Set aside.
- In a large bowl whisk the eggs and the heavy whipping cream until just a bit foamy. Season with salt and pepper.
- Pour the ground beef on the bottom of the prepared dish. Add half of the shredded cheese over the beef, and then pour the egg mixture on top. Make sure the egg mixture is well incorporate in with the meat.
- Add the second half of the cheese and the bacon on top.
- Bake for 30 minutes, or until golden brown around the edges.
