This quick peach compote makes it easy to flavor yogurt, top pancakes or waffles – and on very special occasions, warm peach compote is excellent over vanilla ice cream.
If you’ve never made fruit compote, it is seriously going to be the easiest recipe in your arsenal. Compote is just pieces of fruit cooked with some sugar until it breaks down into a thick, fruity, happy syrup.
You can make a compote with almost any fruit, but this peach compote is my favorite. (I love peaches any way they come. I am a Georgia girl after all!) But this strawberry compote and blueberry version are both amazing!

You can totally make this peach compote with or without the ginger both are really delicious. And fresh ginger is not something I keep in the house all that often. But ginger and peaches belong together. Like tomatoes and basil. Olive oil and vinegar. <— You get my drift here?!
Also, you can adjust the sweetener to account for how sweet your peaches actually taste. I always taste my fruit before I add the maple syrup.
Tips about sweetener: You can totally use regular table sugar in this recipe. Or honey. Or even your favorite sugar substitute. Basically, you can’t go wrong. Here is the other big news, though I love fresh peaches best… you can also use frozen peaches if they are not in season.
How to Make Peach Compote
Combine the peaches and maple syrup in a stockpot over low heat. Grate ginger directly over peaches. Stir gently to mix.
Allow the peach mixture to cook on low for 20-30 minutes or until peaches are very soft and liquid begins to reduce.
You can break down the peaches with a potato masher or fork if you prefer that consistency but it is not necessary.
This peach compote is amazing served warm over pancakes or our favorite whole wheat waffles. I also like it warm ice cream!
Once cooled, I like to keep this around to stir into Greek yogurt for breakfast too.

- 2 cups fresh ripe or frozen peaches peel peaches if using fresh
- 3-4 tbsp maple syrup or to taste
- 1 small finger ginger or to taste
