Lemon Cranberry Scones are sweet with a little tart kick from the fresh berries and lemon. They are fantastic with a cup of coffee or tea for a light breakfast in the morning.
Flour | Baking Powder Lemons | Baking Soda Milk | Lemon Juice Salt | Butter | Sugar | Eggs Frozen Cranberries Powdered Sugar
Place flour, baking soda, baking powder, salt and butter in a food processor and pulse until it resembles course crumbs. Mix milk and lemon juice and let stand for 5 minutes.
Add the sugar to the dry ingredients, then stir in the lemon zest. Add the milk, stir just until combined, then fold in the cranberries. Turn out onto a floured surface. Press out into a 9-inch circle, then cut into 8 wedges. Place wedges on a parchment-lined baking sheet.
Brush egg and milk mixture over scones. Bake for 20 minutes at 400F. Allow to cool for 10 minutes. Then drizzle with powdered sugar and lemon mixture. Serve & Enjoy!
