Rainbow Chicken

Rainbow Chicken is a delicious, healthy lunch or dinner recipe that is packed with protein and a variety of colorful vegetables and coated in a key lime vinaigrette.

  Ingredients:

Spinach | Red & Yellow Bell Pepper Carrots | Avocado | Blueberries Beets | Chicken Breast | Walnuts Avocado Oil | Key Lime Juice Honey | Apple Cider Vinegar Garlic | Lime Zest | Salt & Pepper

Prep Ingredients

Bake and chop the chicken. Wash and cube vegetables into desired sizes. To bypass these steps you can use pre-cooked chicken and pre-cut vegetables.

Toss in Bowl

Place spinach at the bottom of the bowl. Add the rest of the ingredients in groupings one at a time. Add the chicken last in the middle so it is slightly on top.

Combine oil, key lime juice, honey, vinegar, garlic, lime zest, salt and pepper. Mix well and dress rainbow chicken with two tablespoons.

Make Vinaigrette
