Blueberry Lemon Turnovers are one of my favorite seasonal desserts. Fresh blueberries and lemon zest make a fantastic dessert with a few other simple ingredients.
You’ll find two versions of this turnover recipe – one for the oven, and one of the air fryer.
I was slow to air fryer fanaticism — as I am often slow to new gadgets in the kitchen. It seems like I use them like crazy for a month and then I just have to find a place to store them. But I have to say, my air fryer is here to say. I love the crispy edges it creates, especially in these blueberry turnovers! I can’t wait to try it with hand pies too.
Can you imagine these berry hand pies or the pumpkin hand pies with those nice crispy, flaky crusts?
Lemon Blueberry Turnovers
It is no secret I love lemon and blueberry together. There are half a dozen recipes on this site alone. From pancakes to muffins, the flavor is one of my favorites. These turnovers are no different. My dad made apple turnovers when I was a kid and I’ve always wanted to try new flavors because of how much I enjoyed them then… these were totally worth the wait.
How to make Blueberry Turnovers
In a small bowl, mix blueberries, sugar, corn starch, and lemon zest. Press a few of the blueberries with the back of your spoon to pop a few. It will help the sugar and corn starch mix and stick to the berries. Set this mixture aside to make the cream cheese mixture.
In a separate bowl, mix the cream cheese, sugar, and lemon juice. Set this aside also.
Roll out your puff pastry on the parchment paper it comes with and cut each sheet into 4 squares with a knife or pizza cutter.
Place approximately 1 tbsp of the cream cheese filling onto one corner of each of the squares, then top with a spoon full of berries. Fold the opposite corner of each square onto itself and seal all edges with the back of a fork.
Blueberry Turnovers in the Air Fryer
All air fryers cook differently so I recommend checking at the 12-minute mark to see if they are completely cooked. After 15 minutes, your turnovers are not ready, place them back in the air fryer for additional 2-minute intervals until you are happy with their golden color.
When turnovers have finished cooking, remove them from the basket and place your blueberry turnovers on a cooling rack.
If you are Making Turnovers in the Oven
Place turnovers on a baking sheet lined with parchment paper (you can use the same parchment paper that the puff pastry came in!).
Bake at 350 degrees Fahrenheit for approximately 35-minutes until the turnovers are crisp and golden. It is normal to have a bit of the filling seep out as they cook — that is kind of my favorite part.

- 1 box puff pastry
Blueberry Filling
- 1 1/2 cups fresh blueberries
- 1/4 cup sugar
- 1 tbsp corn starch
- 1 tbsp fresh lemon zest
Cream Cheese Filling
- 1/2 cup softened cream cheese
- 1/4 cup icing sugar
- 1 1/2 tbsp fresh lemon juice
Instructions
- In a small bowl, mix blueberries, sugar, corn starch, and lemon zest. Gently press the blueberries with the back of your spoon to pop a few which will help the sugar and corn starch mix and stick to the berries. Set aside.
- In a small bowl, mix the cream cheese, icing sugar, and lemon juice. Set aside.
- Roll out your puff pastry on the parchment paper it comes with. Cut each sheet into 4 squares with a knife or pizza cutter.
- Place approximately 1 tbsp of the cream cheese filling onto one corner of each of the squares, then top with a spoon full of berries. Fold the opposite corner of each square onto itself and seal all edges with the back of a fork.
If using the air fryer:
- Place each turnover into your air fryer basket, leaving just enough room so that they are not touching. Place into your air fryer and bake at 350 degrees Fahrenheit for 15 minutes until the turnovers are puffed, crisp, and golden.
- It is recommended to check at the 12-minute mark as all air fryers cook differently. If, after 15 minutes, your turnovers are not ready, place them back in the air fryer for additional 2-minute intervals until you are happy with their doneness.
For the oven:
- Place turnovers on a baking sheet lined with parchment paper (you can use the same parchment paper that the puff pastry came in!).
- Bake at 350 degrees Fahrenheit for approximately 35-minutes until the turnovers are crisp and golden. It is normal to have a bit of the filling seep out as they cook.
For both cooking methods:
- When turnovers have finished cooking, remove from the pan/basket and place on a cooling rack. Cool, eat, and enjoy!
