This pastry braid is one of my favorite summer desserts. While you can make it anytime, it just seems like the perfect way to enjoy berries when they are in season during the early summer.
Lemon Blueberry Pastry Braid
The best part of warmer weather is all of the barbecues and get-togethers and friends that come with it. But sometimes that means I have to make meals fast. And it always pays to have a dessert recipe handy that whips up quickly but everyone loves!
This beautiful Lemon Blueberry Pastry Braid is one of those recipes where I keep ingredients on hand at all times. It’s so simple to put together and really, really fast. And everyone is always so impressed. As a matter of fact, I’ve had to start bringing two to most events, instead of one, because the pieces disappear so quickly.
How to Make a Pastry Braid
We take a simple shortcut with frozen puff pastry, which you can find in your freezer section, and sometimes you can find them in the refrigerator section. You just need a 1/2 block of cream cheese, a 1/2 cup of mascarpone, a squeeze of lemon juice, some powdered sugar and fresh blueberries (or frozen), and a 1/4 cup of butter.
Mix together all your cheeses, lemon juice and powdered sugar until it’s smooth, and set it aside. Unroll your puffed pastry and make 1/2-inch-wide diagonal cuts on the wings of it, all the way up. Spread your cheese mixture in the middle, and top it with blueberries.
Hold the bottom-center flap up over your filling and then fold each piece to braid your pastry, alternating sides as you go. Brush it with melted butter and bake at 350 degrees for 20 minutes, until it’s fluffy and golden brown. Set it out to cool, cut into slices and get ready to impress all of your neighbors.
If you’ve not tried lemon and blueberry together, get ready. The lemon is not overwhelming. It just makes the fruit taste so bright and so fresh. You can also check out these lemon blueberry muffins, and these lemon blueberry pancakes.
Once you try this combination, you’re never going to go back. You’ll keep these ingredients together all summer long.
