Coconut Energy Bites Recipe
Almonds are extremely healthy for your heart and arteries while also providing your body with healthy fats. They are a snack that we should all be including in our diets, but eating them alone can be difficult because of how dry and plain they are.
Coconut energy bites take away that plain taste that almonds have and incorporate them into your diet in a more yummy way!
All you need to do for this recipe is to grind up the dry ingredients in a food processor until the product is very fine. Then you add the last four “wet” ingredients into the food processor and pulse until the result is almost dough like. After that, you simply form balls out of the dough and place them in the refrigerator to firm them up and store them!

Coconut Energy Bites
Ingredients
- 1 cup almonds
- 1 tbsp flax meal
- 2/3 cup coconut, shredded
- 10 medjool dates, chopped
- 2 tbsp coconut oil, melted
- 1 tbsp coconut extract
- 1 tbsp warm water
Instructions
- In a food processor, grind up the almonds, flax and coconut until very fine.
- Add the dates, coconut oil, extract and water. Pulse until a dough forms.
- Using a small cookie dough scooper, form into balls. You can roll each ball into more coconut flakes if desired. Put them in the fridge for about 30 minutes to firm up.
